I have been craving spaghetti 🍝 for a long time since being homeless now for over two years. The ONLY way of cooking at the moment is using a microwave when we have a night at the motel to recharge and get restoration. So there is a lot of improvising when it comes to making something to eat.
Thankfully I found options to serve my vegan needs. Spaghetti for example you can never be too careful as to what ingredients they use to make the pasta.
A couple weeks ago I found a vegan option for spaghetti at the dollar tree how about that. So without further ado I will start with the ingredients first.
Ingredients
Cauliflower Spaghetti 🍝 found at the dollar tree for $1.25
These are the plant based Meatballs that were from Target for $5.29
The sauce was also from target for $1.69
Ofcourse dollar tree had tomato sauce as well jars like this were about $2.50
Seasonings these days seem expensive but I picked this one from Dollar Tree for $1.25
It was a little salty but I didn't add any other spices to this meal so it's okay. Dollar Tree has a great selection of basic seasonings too that you can pick up and keep in stock.
There is nothing like a nice bowl of salad with your pasta that makes all the difference. I get this kind because the cabbage 🥬 just feels hearty when I eat it and it's the only kind that doesn't upset my stomach. This was from target for .99
You can add a can of black beans or garbanzo beans also known as chick peas for something additional. You can find these beans at either target for .89 each other brands may vary in price but we usually get the good and gather brand from target or Dollar Tree for 1.25 each which sells Goya as the brand.
And the dressing was Italian dressing simple and I had it on hand that was from Dollar Tree for $1.25
The total for everything was about $10.47
However you can make it for a family if you added another two bags of the cabbage for a nice meal for a family of four.
So the spaghetti instructions were for the stovetop and the time to cook was about 7-9 minutes.
Since I was using the microwave I estimated the time about 6 minutes in the water stirring in between and then after dumping out the water I added the meatballs which needed to be cooked for 5 minutes also. I put the meatballs on top of the spaghetti and put the sauce to cover both and popped the bowl back in the microwave for another 5 minutes.
The Salad 🥗 was just putting the cabbage in a bowl and then adding the dressing on top. But you could add avocado 🥑 or beans as I mentioned before for added flavor. You can add anything else to it really. I just used what I had on hand.
Final Result
It was amazingly delicious 🤤.
I kept making this dish over and over and I added some extra stuff this time.
I added broccoli here and cooked it with the pasta sauce and vegan meatballs as I had to cook the pasta twice because it was longer.
So this time around my husband got banana peppers which I added and put a can of chickpeas in as well not the entire can maybe less than half and added Italian dressing. It was so good 😊
