Vegan pasta 'Bake' with Salad

 I've been looking at different ways to make vegan meals in the microwave since this is all I have access to right now. Obviously if I had an oven I would use that but I gotta work with what I have. I created this and called it vegan pasta 'Bake' because of the way the vegan cheese melts on top reminds me of baking it in the oven.                          Ingredients  This is the ingredients list for the meal  Step 1 -Place pasta in a microwave container and since I'm doing this in the microwave I will do it for about 6 minutes at a time. - The first 6 minutes will cook in the water and then you have to dump out as much of the water as you can. Keep in mind that I don't have a specific tool to dump the water I just slowly tip the container in the sink so water can come out. It's okay if there is a little water left . -The second 6 minutes you'll add your sauce and the water will help to thin it out a bit and...

               Being limited ingredients and on a budget I have to find ways to create meals that will taste good and I don't mind having every once in awhile. We are homeless and rice and beans are out go to ingredients when we don't have a lot to spend so here are two ways of making rice and beans. They add flavor and creativity as to the types of ingredients you can use or mix up... Enjoy!                                  Ingredients  Box of rice check directions on how to cook for microwave. Vegan Spaghetti and Meatballs with Salad 🍝 🥗 🤤

 I have been craving spaghetti 🍝 for a long time since being homeless now for over two years. The ONLY way of cooking at the moment is using a microwave when we have a night at the motel to recharge and get restoration. So there is a lot of improvising when it comes to making something to eat. Thankfully I found options to serve my vegan needs. Spaghetti for example you can never be too careful as to what ingredients they use to make the pasta. A couple weeks ago I found a vegan option for spaghetti at the dollar tree how about that. Plant based Meat Ball Sub with Banana Peppers

               These are the ingredients:           Sourdough bread Baguette 🥖   Banana Peppers and Tomato Sauce                      Plant based Meat Ball         Oat milk Mexican Blend Cheese  So I started off by soaking the bread a bit under water not too much and putting it in the microwave for 30 sec. This helped soften the bread so I can cut it easily. Next I cut it in half so I had two and sliced the side to make an opening for the meat balls to go in. Then it was time to cook the plant based meat balls in the microwave with the tomato sauce on top. I had to cook them for a total of 5 minutes turning them half way through. I then cut each meat balls in half so they will be able to stay in the Sub and not roll out. Hummus Wrap 🌯

One of my favorite things to snack on is hummus and ever since I became Vegan it's been our go to food. Homemade is always BETTER but I have to work with what I have. There are so MANY different brands out there that only a couple have become my favorite. The flavors I love is the regular and roasted red pepper flavor. Not really a fan of the garlic one. I find it upsets my stomach no matter the brand. Hummus is amazing to eat with everything not just veggies. In a typical middle Eastern dish you would eat it home made ofcourse with a drizzle of olive oil and some pine nuts in the center and red pepper flakes sprinkled around. You would typically eat it with pita 🫓 bread but I don't always have the ability to get pita bread we use tortillas and we make hummus wraps out of them. Ingredients  Tortillas are just as good as pita bread  Sorry for the quality of the picture but this is the classic hummus and a target brand.
