Being limited ingredients and on a budget I have to find ways to create meals that will taste good and I don't mind having every once in awhile. We are homeless and rice and beans are out go to ingredients when we don't have a lot to spend so here are two ways of making rice and beans. They add flavor and creativity as to the types of ingredients you can use or mix up... Enjoy!
Ingredients
Box of rice check directions on how to cook for microwave. Average time is about 5 to 6 minutes for this brand. It's from Target and the cost is $1.39
We use tortillas from Target it's about $2.19
As of recently this was $.99 and now it's one of their top sellers again at Target for $1.19
Avocado prices vary depending on where you buy them from right now the price on these is $.89 at Target
Again at Target for $2.99. I don't mind the regular because we like to add some different types of seasonings and it pretty much goes with anything.
One of my favorite salsas also at Target right now it's on sale for $2.39 but normally it's $2.99
These are black beans and they go well with the rice from Target for $.89 a can
Finally we have
The good and gather brand is from Target and the price for this is $3.59
As of right now we don't shop at many places because they are much farther than we want to walk. So our current go to places to shop is Target and Picknsave but pretty soon they will have Woodman's open which is across the street from Target in our area so we'll see what kind of deals we will get from there.

I include the prices so you can vary the amount it costs to purchase everything if you are on a tight budget. You can use different brands that are or maybe cheaper and/or opt for one can of beans instead of two which is what my husband and I do sometimes.
You can get a different flavor of hummus instead of the regular like the red pepper one for added flavor instead of the spices or add spices on top of that too it doesn't matter. These are just options and you can tweak them as you try this recipe according to your taste buds.

Rice and Beans Burrito 🌯
1. So first thing is first you need to cook the rice in the microwave for about 5 minutes as you will see in the video
2. At about 2 minutes or so I take the bowl out (of course use a microwave safe bowl ) out and stir the rice and add the can of black beans.
3. Cook the rice and Beans for the remainder of the time to equal to 5 to 6 min total then put aside. You may need to taste the rice and beans to see if the rice cooked all the way. If it's not cooked all the way add a tablespoon of water and microwave for another minute then take out stir and try it. Your amount of time will vary depending on how strong your microwave is. Taste before you cook it longer.
4. In a plate lay out your tortillas and spread the hummus and add your seasonings if you want
5. Add your veggies (coleslaw mix) and avocado 🥑, banana peppers are my favorite too.
If you grow your own veggies you can add tomatoes too. I don't get tomatoes anymore due to my upset stomach these days.
6. Then add the salsa Verde wrap 🌯 and serve

So in this one I opted out of the tortillas because I like the hot and cold mix
Follow the same steps up to step 3
4. In the same bowl as the rice and beans add some hummus, avocado, salsa Verde, guacamole and the coleslaw mix
5. Mix everything together and ENJOY!
The final result
So this is the only picture I have of the burrito 🌯 but the next time I make this I will take a picture of the bowl version it tastes better than it looks let me just throw that one in there so you are aware ahead of time.
